The history of sushi originates in South Asia, where cooked rice began to be used for cooking and canning fish. Peeled and cut into small pieces, the fish was sprinkled with salt and mixed with rice, and then placed under pressure from stones, which in a few days replaced with a lid. For several months, the process of lactic acid fermentation of rice and fish has taken place. Approximately in the VII century. Through China and Thailand, this method has gained proliferation in Japan. The tradition of fermented fish consumption has survived in Southern Asia today. The Chinese character, translated as sushi, means "marinated fish," but, in fact, the tradition of their cooking in China has disappeared. Today, in Japan, they are preparing an antidote.
In the seventeenth century. Rice sushi appeared, which included boiled rice, rice malt, seafood and vegetables. Soon began to produce rice vinegar, which was added to rice, which eliminated the process of fermentation and significantly reduced the time of preparation of sushi.
